I was thrilled to see gluten free pancakes come up for review on the KIWIreviews website. In the last month our three year old daughter was diagnosed with Coeliac's disease (strict gluten free diet). With her being so young it has been really tough on her not being able to eat her favourite food anymore. So needless to say when our review package arrived she hounded me to make them the minute it arrived.
She asked for pancakes for tea so I finally gave in and we made them for dinner and added in some bacon, banana and maple syrup. I was surprised at how quick and easy they were to make as you only needed to add egg and water then mix. I found it made quite a thick mixture so I added in a bit more water to thin it down a bit. I popped some butter into my pan and waited for the mixture to bubble before I flipped it over. Amazing golden pancakes. Miss three was by my feet excitedly watching and waiting for the time where she could finally eat them.
I popped them onto the plate, added some bacon, banana and maple syrup. The pancake sliced nice and easily and was so very soft and fluffy. The texture on my palette was amazing - soft, no lumps and it almost felt like it melted in my mouth. With some gluten free products they can be thick and gluggy but this wasn't.
I would absolutely buy this mix again. In fact, since trying these we decided to stop in at the Farmers Mill Cafe in Timaru and tried out their gluten free sweet treats and brought their gluten free bread mix to try. Thanks Farmers Mill for making an amazing gluten free product.
I have never been the best cooking breakfasts. Whether it is omelettes, pancakes, or even french toast, I have struggled with not burning them, and sticking to the pan. I suppose I generally sleep in too much so I don't have the experience with these. So having a pre-made mix that only requires an egg and some water seemed a great idea for an amateur breakfaster like myself.
The instructions were easy enough to follow, though some words like "mix" are vague enough to lead to differences. I started mixing with a wooden spoon (which is pictured on the box) but I found it didn't work too well. Switching to a fork worked well with the water and egg, but left lumps when adding in the dry ingredients. So I ended up switching again to a third mixing instrument, finally using a whisk, to get rid of any lumps and properly combine the mixture.
Using the wrong tools seemed to be a common problem for me. Trying to get the right heat on the stove-top was difficult, and I initially went too hot and the pancake stuck to the pan. So instead of oil I tried using butter, but it soaked into the pancake, and when I flipped it, there was no more butter left, and it stuck again. After another failure, I lowered the heat, switched back to oil, and changed my spatula for another that had a thinner end. Reducing the amount of mixture that I used was also very useful in actually creating round pancakes that didn't break up upon flipping.
As you can see from my photos, I went from failure to success!
The actual texture of the pancakes was rather rubbery, though it was surprisingly light (once I used less mixture. When I used too much, they became rather heavy and stodgy). The flavour was pretty average for pancakes, even though it was gluten free. I tried them with some Barkers morello cherry jam, and maple syrup, which worked a treat!
A great product, that is very near perfect, and is impressive for a gluten free product, and very easy when you get the hang of it.
My sisters has recently had to go gluten free and I always struggle on what to make for her when she comes to visit. I'm very reluctant to go out and buy gluten free mixes because often they come with a much higher price tag and if it turns out being not so good then it's a complete waste of money. When I saw gluten free pancake mix up for review I was very keen to try it out with my sister. I have never seen Farmers Mill in my local supermarket but if I had it's a brand I would of tried by now as unlike many gluten free brands the price isn't sky high.
My review parcel arrived a few days before mothers day and as the entire family was getting together for a high tea I figured it was a perfect time to try the mix out. Rather than pancakes I decided to make them up as picklets with jam and cream, that way there was a yummy treat at the high tea my sister could enjoy as well. Pulling out the packet the instructions were very simple and I liked that you didn't have to add too many extra ingredients. As I whipped them together I cut down the water a little to get a slightly thicker picklet mix. Cooking them was super easy as well and for once I managed to actually cook the whole mix rather than ruining at least a pan or two!
As I was cooking them I couldn't resist I had to give them a taste test fresh out of the pan with a little butter. Straight away I was pleased they were perfect soft fluffy little picklets and the taste was amazing. If I didn't know they were gluten free I never would of been able to tell they tasted just like normal ones with the perfect hint of vanilla to them. The real test would be what the rest of the family thought as well somehow I managed to make up the rest of the mix without eating them all and got them ready to take to my mum.
I'm pleased to say they were a hit with the rest of the family including my gluten free sister, she already has them on her shopping list of must buys. We had lots of amazing food on offer at our high tea but the picklets were the first to go and there was even a disagreement over who was having the last one. I'm now really keen to try the rest of the Farmers Mill gluten free range.
Ask anyone I have ever made pancakes for... I *SUCK* at it. They will get served, if they are lucky, a half-cooked, half burnt, barely edible mess that looks more like a pancake going to a Halloween party dressed up as scrambled eggs. Not pretty, not appealing, not edible (by my standards.) So I was REALLY nervous about this.
Prep was very simple - in a bowl mix one size-6 egg and 2.25 cups of water. Pour in the powder, mix well until smooth. Pre-heat frying pan. Pour in batter and cook. Because I was nervous, the first one got a little undercooked, but the second pancake turned out really well. Even my fussy Mr 7 ate it and said it was really nice, and that he would like another one please. I felt so chuffed, I made more.
To take it up a notch, I made the pancakes bigger, using 2 full scoops (about 3/4 cup) per pancake, and tilted the pan so the batter spread to the edges. Once they were cooked on one side, I dropped a couple of small knobs of butter on the raw side, then quickly did the wrist-flick flip that turned it over in one piece - a manoeuvre that I have perfected with fried eggs. Onto the cooked side - about 3cm from one edge - I placed a row of banana slices, a pinch of cinnamon sugar and a drizzle of maple-flavoured syrup. Then I carefully rolled the pancake up, let it cook for about 20 seconds more, and decanted it onto a plate. Having two non-stick frying pans meant I could do two at a time.
I dressed the final result with the left-over banana, a little drizzle more syrup and a final sprinkle of cinnamon sugar and that was dinner sorted. Surprisingly filling, I was only able to eat one and a bit of my pancakes, so I was glad Mr 7 liked them as he gladly finished off the left-over half of my last one with glee.
Overall, I think these are awesome. I have actually tried a number of shake-n-make pancake mixes in the past, and without exception they have failed for me. The common issue is, of course, me. I just can't seem to do pancakes/pikelets at all well. Until now. SO, gluten-free or not, this is my must-do go-to premix for pancakes from here on in! The resulting pancakes are light, fluffy, delicious, and most importantly, pretty much me-proof. :)
I'm not entirely sure I have ever used an instant packet mix like this before, and if I have then I don't remember it ever having gone well. With this stuff, however, I was blown away by how well it worked. Pancakes are one of my favourite dessert items, but for the life of me I have never been able to make a proper batch of pancakes in my life before this.
I think that the box was quite informative, it had a good layout which made finding any desired information easy, and considering this is a gluten-free product (which is great, by the way) then finding this kind of info may be very important to those who have certain food intolerances. The recipe for this product was nice and simple, there are only 5 instructions, and the ingredient list is very small, it's just 2 1/4 cups of water, 1 egg, and the packet of pancake mix, simple and elegant.
The mix was easy to use, The batter was easily brought to the required consistency, and it cooked very evenly as well. The mix rose well, and at the end it had the appearance and texture of a proper pancake, unlike the doughy, half-cooked mutants that were my attempts at making pancakes from scratch. The portions produced were really good, this mix easily made 2 portions of 6 cakes, making a total of 12 as the box stated. I was basically the only one who ate this stuff, so to avoid being greedy I used up half of the mix one night, and then stored the rest in the fridge overnight and then used it for breakfast.
The taste of the pancakes was REALLY good, it was sweet, with a noticeable vanilla flavour. The resulting pancakes looked quite different from what the box showed, which are more like Crepes than Pancakes, these were more like the moist, spongy, thick pancakes you may find in a cafe. Overall, I was very pleased with this product, and now I am literally craving more, so I am going to have to track down where this mix is sold; I'll try the nearest supermarket as a start. I would highly recommend this to everyone, as it was quite a treat, and it required little to no prior cooking experience, so it a great thing to have in your pantry.
I find the biggest issue with making pancakes/picklets is all the ingredients required so when I read the back of the packet I could not believe you only needed to add water and an egg. I got rather concerned as I would of sworn it was a typo and sure they meant milk but followed the instructions the whole time assuming that they would turn out to be a disaster. They are extremely simple to make mix the water and egg and then add to the pancake mix and mix together until a smooth batter is formed. Basic/easy/simple.
We prefer Picklets over Pancakes and so made smaller shaped items and got way more than twelve as indicated on the side of the packet. Actually lasted us for breakfast and lunch so was a bonus. Everyone loved them. They had a crunchy outter shell so it was really different and I enjoyed the taste it was picklets but yet it wasn't as tasted completely different.
I did find they took a little longer to cook than what I am used to, but the wait was definitely worth it. We added jam and butter to them and really made the jam pop. Girls insisted next time to add cream but I didn't mind them without any extras added to them. With only two ingredients I am blown away by the taste and the added bonus of being Gluten-Free made a nice change. definitely will be on our shopping list in the future as a quick simple snack.
As luck would have it, this Homebake Gluten free Pancake mix arrived about four days before Mothers Day, so I decided to set a cunning plan into action to get the kids to make me breakfast on the day. I waved the box under their nose and said things like "gee this looks good", "this would be a nice weekend treat" and then to really make sure they got the hint I left a bowl, egg, maple syrup and the Pancake box in middle of kitchen bench the night before.
I'm pleased to say my 10 year old got the hint and I woke up to the delicious smell of cooking pancakes on Mothers Day. She had followed all the instructions by herself; combined water and egg, tipped mix in, whisked until smooth and then greased the pan (she used butter as she prefers that) and served up the most marvellous fluffy looking pancakes stacked three high smothered in maple syrup. With mouth watering taste buds I eagerly sat down to our breakfast table and dug in! The pancakes did not at all disappoint, they had a lovely fluffy consistency which had a lovely vanilla flavour and if it wasn't for the fact I was totally stuffed full I would of eaten more!
I would totally recommend the pancake mix to everyone, not only the gluten free among us. They are so easy to make and are really a cut-above any other ready to mix pancake product that we have tried on the market. I will be checking at my local supermarket to make sure they stock it as after having this mix I won't be going back to anything else.
My husband and I love pancakes, but normally make them from scratch, so I was interested to see how this box mix compared. I happened to have the box in the cupboard when a friend with celiacs came to visit - what a perfect opportunity to try this out, and for me it was great to be able to offer her something she could eat.
The first thing I noticed was how easy (and cheap) these are to make. I'm used to using heaps of milk and more than 1 egg (depending on my batch size) and this only needs the 1 egg plus water. This makes for a very economical feed. I whipped these up with friends while standing around chatting and the mix was done in no time. As I was concerned about traces of gluten in my frypan, I cooked these on a layer of baking paper. I still put oil down as suggested, but after the first one I switched to butter as I love the taste of pancakes cooked in butter. Both ways worked fine.
Everyone loved the taste - these could be served to those with gluten allergies and everyone else without making different batches - you wouldn't really know they didn't have gluten. Only I could tell when I was cooking them as I taste tested a slightly undercooked pancake - this had a different texture to normal. But the cooked pancakes were light and airy and very tasty. The vanilla flavour was lovely and prominent too. I didn't manage to make my pancakes look very neat and tidy but that might have been to do with the distractions around me!
As none of us were very hungry, I popped the leftover batter back in the fridge to make more the next day. I noticed that it would be difficult to split this recipe as it's not that easy to add half an egg. But the next day the batter cooked up very well. This time I made smaller pancakes (effectively pikelets) and these were delicious ... and looked far neater than the pancakes the night before!
I have no complaints and love having gluten free options that I can serve to an entire crowd and no one has to miss out. I'd certainly buy these again when I need to cater to allergies.
Pancakes on Saturday morning is a tradition I have with my girls. We usually make it from scratch and even my 6 year old knows the recipe off by heart. When I was given Homebake's gluten free pancake mix to review the girls were keen to try it. I was a bit skeptical as gluten free and packet mixes aren't always the tastiest.
The instructions were very easy. Just mix water and egg, add the mix and stir until smooth. I found it took a lot longer than usual to get a smooth batter. I began to wonder if it would ever happen. Eventually it was ready for the frying pan. Although the packet says make 12 pancakes ours must have been jumbo ones compared to our as we made just 5.
From the moment I opened the packet I there was a lovely familiar smell. I finally identified it as custard. This must have been the vanilla flavour. My girls both had their first pancakes with their usual syrup topping. They enjoyed them and came back for seconds. It was interesting to see that they both decided to have their second ones without any toppings. When I asked what they thought they said it was just as good without syrup.
One of them had half a pancake left which she placed in the fridge and ate for afternoon tea. She said it was good cold too. I was surprised to find how affordable the mix was and will be recommending it to my friends with gluten free children and buying it for ourselves as a change from our usual pancakes.
I have never used a pancake mix before, so I was interested in testing out this product. The fact that it was gluten free was also a plus as I had planned to try it out on some friends, one of whom has a family member who is always looking for new gluten-free products, so it was a useful opportunity to try the product.
I tried to follow the instructions exactly as they were set out on the packet although I was a little fazed by the requirement for 563 ml of water - how on earth do you measure that accurately? (You could also use a cup to measure - but we have mugs!) And a 70g egg was another complication as the eggs I was using were from a free range, mixed grade pack! Common sense prevailed; I combined a largish egg and the packet mix, turned the electric beater on, and just added water till it looked right. According to the packet, you were supposed to mix the egg and water first then add the mix, but I am afraid that was not happening. In the end it seemed to make no difference. The mixture was smooth and looked perfect. It even smelled good! I did notice that it started to rise and fizz alarmingly, just like a yeast dough, so I do agree that it is best to use all the mixture up in one go rather than storing it - as indicated in the instructions.
Cooking was easy. I used a spray oil to coat a non-stick frypan and cooked the pancakes four at a time. It was necessary to use a medium flame as they needed to cook through and I did not want them to burn The result was a light, sweetish pancake which had a wonderful taste and texture. I tried one straight from the pan with no topping at all and it was still delicious. These have got to be some of the nicest pancakes I have ever tasted, far superior to the flour based recipe I have used in the past, and so easy to make that it is simply not worth going out and buying separate ingredients.
I served them with a feijoa and persimmon fruit mix (drizzled with honey and oven baked until caramelised) and some whipped cream. There were a few pancakes left over, and we had them warmed up for breakfast with maple syrup and bacon to accompany them. Both versions were delicious, and, although the packet stated that it would make approximately 12 pancakes, I ended up with 17, so there is a generous amount of product in the pack. There was more than enough for five people to have a good sized helping.
Next time I am going to try making some into a trifle. They are light enough to take the place of sponge cake and I can imagine them soaked in a little sherry and topped with fresh fruit and custard. Yet another item that is destined to become a regular item on my shopping list when I want to impress someone with my culinary skills.
