I have tried many cake mixes in the past by various different companies Greens, Edmonds, Betty Crocker... and I have to say that Betty Crocker is by far my favourite. The cakes, muffins and cupcakes are always super moist and never dry. Sometimes you just feel like a yummy baked treat but get put off as some baked items can take a lot of preparation and by the time they are cooked and cooled you've probably already been waiting a good few hours and the craving for this sweet treat has passed. This is what makes these Betty Crocker's packet mixes so so so good. Within just a few minutes you can whip up a tasty treat with just a few basic pantry staples such as an egg, some water, a spoonful of oil and a little bit of milk the rest is in the box. The instructions are step by step and are so easy to follow, almost anyone can make these problem free.

Now chocolate and caramel are my two favourite things and in my opinion they go hand and hand. When I saw this yummy new addition to the Betty Crockers range I couldn't not buy it. I got my bowl out and tipped in the dry packet mix and simply added on 2 eggs, 1/3 cup vegetable oil, and 1/2 cup water then mixed it together with a wooden spoon for a minute or so until just combined. I used cupcake cases in my muffin tray for a mess free clean up. I dropped a small amount of batter into each case and then added the caramel, which was super easy, just cut a corner off the caramel sachet and squeeze a small amount on top of the batter. Cover with the remaining batter and into the oven they go for 15 minutes.

The hard part was waiting as they cooked the yummy smell of chocolate and caramel lingered through the house. I ate these while still warm and they were sooooo good, and even better served with a dollop of ice cream while still warm. I have also tried these with melted chocolate drizzled over top with a sprinkling of M&M mini's for the ultimate indulgence.

Definetely a product worth buying for when you need to whip up some baking fast.

Sometimes there are not enough hours in the day to do everything. So while at the supermarket recently I saw that this was $2.99 on special and thought "wow how can I make Chocolate Caramel Muffins for less than $5?" so quickly bought it.

I needed some baking done for lunches so while making dinner I decided to do this at the same time, as could use the oven to save money. The instructions are simple enough and got my daughter to beat the water, oil and eggs together with the muffin mix while I carried on preparing dinner. As much as she wanted to help with the next stage, I decided against it and instead she went and played with her sister.

I greased a 12 hole muffin tray and then filled them a little under half way. The next stage was to snip the corner from the caramel sachet and squeeze a generous amount of caramel in to the centre of the mixture. Much easier said than done. The caramel was very sticky and did not want to come out of the packet, and when it did it was one big gloggy mess. It got all over my fingers trying to rip apart. Also trying to get in the centre of the muffins was not the easiest thing either. I was off centre in a majority of them but being in a hurry just carried on and covered with the rest of the mixture - making sure that I covered the caramel.

Placing in the oven for 18minutes (half way between 15 and 20 minutes) on 200 degrees I forgot about them while finishing dinner. After the timer went off I opened the oven to find the caramel was oozing out of all of the sides. Not one had cooked with the caramel intact. Was not impressed. Letting them cool for a while before transferring to a wire racking I figured well they can't be sticky. How wrong was I. If you touched them you felt the stickiness and was concerned my daughter would not eat.

However, both my daughter and husband loved it. My youngest would only eat the caramel and left the rest where as I found also that they were quite dry. Still nice mind you. Looking at them feel like a bit of a failure as wanted the caramel to be a surprise. Saying that if ever on special again will definitly buy again.
